As spiced lamb meat, carrots, shallots and an array of beans simmer in the crock pot, I’m quickly realizing that what my wife thinks of as a chili recipe is actually just going to be a delicious stew.

Driving home from north Texas yesterday we stopped off at this diner off I-45 where I had some damn good chili that was almost certainly made from a starter can.

I’m wanting to make a pot of chili this weekend. I’ve only tried to once and it didn’t come out very good. I’m looking for a good, simple recipe. Anybody got one?

You can use Fritos instead of rice if you want.
