These are an inch thick. Baked them at 350 along with the veggies in a cast iron dish for about 30 minutes. I like it a tad pink in the middle. Let’s say medium.

Lots of leftover root veggies from last night, so breakfast for dinner tonight. Turnip and sweet potato hash with eggs and some leftover brisket we froze earlier this month.

I made a stir fry with shrimp, carrots, and broccoli, served over rice. It was spicier than I intended too.
