I don't understand the logic. Why not just install a filter? I'm having a commercial-grade filter installed at my site, and it won't impact flow rate one iota. Total cost for parts and labor is $150.
I think the point here isn't to filter it, Trag. Quite the opposite, I imagine. They want all that New York grit in it.

Ah, you are probably right. The Catskills water that supplies NYC does actually taste very good.
Yeah, they talk about the tap water in NYC is the reason for the good dough. So they have tap water shipped down.
