Currently roasting a shit ton of beets. Will dice them up and drizzle them with some balsamic and sea salt and toss them in a container in the fridge.
Having them for dinner tonight with a dollop of cottage cheese on the side.

Made my falafel "dough" this afternoon. It's in the fridge setting up.
Frying up falafel balls later and stuffing some kickass pita with the falafel, a cucumber-dill-garlic-yogurt sauce that I made, boston lettuce, roasted cherry tomatoes, sliced cucumber, and sliced garlic pickles.

I heard about fried mash potato and somehow I’m intrigued and baffled I’ve never heard of it but it’s sposed to be really great.
