doing beef ribs this time. i'll dry rub them (easy: brown sugar, cayenne, chili powder, salt, and pepper) and leave them for 12 hours. then i'll steam them on a covered baking sheet on a wire rack for 2 hours. then i'll smoke them with wood chips on top of charcoal for 2 hours (on the cool side).

i haven't done beef ribs in awhile, so we'll see.
