Oh man, I really have no idea where to start. Are you a total newbie?

Good question. It's possible I saw stuff I just didn't know they were part of those genre types. Let's assume I am.
Well, the banner of "exploitation" covers a wide swath of films. There are all kinds of subgenres within it that may or may not suit your taste.

IMO, the greatest exploitation film of all time is Cannibal Holocaust. There is just no rivaling it. But that movie is...probably a bit rough for an outsider.

Some others I love:

Multiple Maniacs
Sin in the Suburbs
I Spit on Your Grave
Female Trouble
Forbidden World
Mandingo
Hitch-Hike
Blood for Dracula
Frankenhooker
The Gore Gore Girls
Bloodsucking Freaks
Massacre Mafia Style
Mountain of the Cannibal God
Turkey Shoot

I've never been a super big fan of Giallo, and the stuff I tend to like (The Night Evelyn Came out of the Grave, The Cat o' Nine Tails) doesn't seem to be super popular within the genre, so I might not be the best person to ask for recommendations. Probably best to start with some of the big ones, like Deep Red or A Bay of Blood.

A few Gialli I watched recently that I enjoyed a lot:

Who Saw Her Die?
What Have You Done to Solange?
Torso

Watched Bumblebee. It was alright, you know? The battle on Cybertron was almost worth the price of admission. So awesome. Though it was jarring that they got those so right but the ones that were on Earth looked like Bayformers.

And then they killed Cliffjumper. Man. Though at least he looked like Cliffjumper so they had that going for them.

Also watched For Your Consideration. I honestly can't tell if it was good or not. It felt more disjointed than their other films and more like a "hey, that's so and so from the other movie! wow, I could barely recognize him/her."

Terrifier.

Well damn that was gory!! A very low budget film, super ultra violent, with a very scary clown. The end was pretty cool.

The Old Man & the Gun. This was quite good. Robert Redford is always a joy to watch

Currently watching The Nun. Looks dumb so far
