I mean, that's kind of the story of the PT and the Empire though. A fully capable Republic saw a threat, and entity of evil in Separatists, and went after them to destroy them. Really that would be much more of a "rip off" or retread than what we got in the ST.

Except the Senate was controlled by the leader of the growing power. It would be a nice bookend to that story, but different enough to stand out (No Jedis, etc.).
Well remember JJ did say (drunkenly) he was trying all three trilogies together.

The Federation vs Romulans is an entirely different story, and also mostly badly handled by Star Trek.
I’m saying one big space federation(republic) using their fleet to be on a war footing but tentative peace with a rival big space federation (FO) is very Star Trek.
It’s too broad strikes for Star Wars. Not saying it wouldn’t be interesting but we’ve never had it to date except in clone wars maybe. so it wouldn’t really fit now on the big screen.
Rebels was kinda good at showing that rebellion was small splinter cells spread all over attacking the empire. That’s kinda more SWs vibe. David v Goliath rather than two titanic entities slugging it out

I get where you are coming from in the last comment, but I think that is only one of many different ways it could have been done differently from what it was. Like in Rogue One, showing people that live in peace, and that are then crushed by the Empire, is very powerful. We should have had scenes from the republic, someone dying, someone escaping at the last minute. Perhaps some dialogue, showing that the republic had become too pacifist in their thinking. There was plenty of room for a greater scope, and for expanding the story.
Well that was avoided and wisely so imo in TFA so as to establish in the publics minds a distance from the badly written overbearing presence of politics in the prequels.
As we know scenes were shot of Leia sending a representative to the NR to warn them the first order were about to attack. And it was cut out. Yet we see that very rep on that balcony on hosnian prime just as it’s about to get blaseted.
JJ made a lot of great choices for TFA, but yes it "shoulda coulda woulda" been better with some changes. The PT had its flaws, and perhaps JJ leaned too far the other way to avoid those. I could have a similar discussion about Revenge of the Jedi though, and my complaints about TLJ are far more extensive. I have enjoyed The Force Awakens every time I've seen it.
