I had a Frito pie at a place in Austin earlier this week and wouldn't you know, they served it in the bag. I'll be damned.

B’s [Insert Kick-Ass Name Here] Chili

1lb ground beef
1 large onion, diced
5 cloves of garlic, diced
1 bell pepper (I like yellow, but whatever), diced
2 poblano chilies, diced
2 jalapeno peppers, diced
kosher salt
spices (roughly a teaspoon each: cumin, chili powder, onion powder, oregano, chipotle
powder, black pepper, mustard powder)
1 pint? baby portabella mushrooms
1 large can of whole, peeled tomatoes (crush and retain liquid)
1 can black beans, drained not rinsed
1 can dark kidney beans, drained not rinsed
1 can of beans (your choice), drained not rinsed
1 12oz beer of your choice
V-8 Spicy
1 tablespoon creamy peanut butter

Brown the ground beef. You should really spoon out some of the fat, but I usually don’t.
Add the onions, garlic, and a little salt until the onions are soft.
Add the peppers, chilies and spices for about 2-3 minutes.
Add the mushrooms, another teaspoon of kosher salt, tomatoes (w/ liquid), beans, and 6oz of
the beer and let simmer for about 30 minutes, stirring occasionally.
Drink 6oz of the beer.
Add the peanut butter and use the V-8 to adjust the consistency.
Let simmer for another hour minimum (chili improves with additional simmering)
If it too much liquid boils off, add more V-8.

Cooling it down:
Almost all of the heat is in the poblanos and the jalapenos. You really need to include at least one jalapeno, even in pussy chili. You can also cut the membranes and seeds out of the peppers, that’ll drop the heat. Chili powder and black pepper can be reduced to drop the heat a little more. Oh, and you can use regular V-8, instead of the spicy.

Fucking around with it.
There are a couple of points that you can screw around with this recipe to make it your own.
Use pork instead of beef or go half and half.
Play around w/ the peppers and beans, there’s like 100 different varieties at the store.
Go with some gourmet mushrooms, cremini, oyster, something like that.
If I make this for kids, I mix in a pack of frozen spinach in to make it “healthier” and get some more veggies in. You could probably also sneak in a diced up carrot or two.

The recipe makes about 10-12 bowls of chili (I think). Serve with sour cream, shredded cheddar cheese, and crushed up Fritos.

The peanut butter is a critical ingredient. Include it even if you're feeding this to someone who will go into anaphylaxis. Just have an epi-pen ready. It's worth it.
