We just made a huge batch of homemade mac n cheese for a Melbourne Cup BBQ tomorrow, and my Australian in laws are basically horrified.

Added a cup or so of water and the cooked seafood, along with a bag of cooked crab meat (real, not imitation) and let it simmer on low for like half an hour until it was nice and thick. Served over fettuccine pasta. It was fucking delicious and I have plenty of leftovers.
Making this tonight. I'm gonna add some capers to the sauce, other than that it'll be the same as before.
