i bought small 4 lb brisket flat today....i am going to make my very first home made pastrami next week..brined for 5 days in pickling spice, etc..cant wait to try this..anyone here do it before?

i saw an interesting recipe today that requires a sous vide...ive never owned one and never really considered one..whats the difference between the $300 ones and the $99 ones?

low key don't know if you mean me or not. I'm going to do a chicken thing tomorrow with it. The food comes out alright, I just don't get the appeal really since it's like a slow cooker that you can kind of throw away when you're done.
