This is a fantastic idea. The only issue is that Boba Fett still would have been pretty young at the time (if this is indeed the Siege of Mandalore that we're seeing). So, I'm not sure the timeline makes sense. But I like where your head is at.

But we get to see him young! And also disappear after he went away for a job...the only thing that doesnt makes sense is he would have told the mando about the jedis right? Because he hates them.
I really think that Rex makes the most sense. He's a character that can easily transition from animation to live action. He has a lot of meaning to those who have watched TCW & Rebels but you don't have to have watched those shows to "get" it. It's way more easter eggy than canon busting. And Filoni adores the character. And we know he lives through the battle of Endor, so he could actually be a recurring character on The Mandalorian.

But by "young" I mean he'd be like 12 years old
If you want to see 12 year old Boba Fett, you should check out The Clone Wars. He's featured in that series a lot.
But, yes, you're totally right about his hatred of the Jedi. He absolutely would have passed that hatred on. Good call.

mando shoots Carl W. in that spot because he doesnt want to kill him right?
in as much as they telegraphed it, yes.
"Hey Mando, look at what I got!" *pulls money literally made from armor from chest pocket*
I dunno if I buy that Mando took that accurate a shot through steam.
I mean him pulling it out earlier is just a case of “you don’t put a gun on the wall if you’re not gonna use it”
I lean toward it being an attempted kill.
If we're meant to believe that he has a friendship with Carl that would lead him to spare his life in this situation, the show hasn't done the work to show us that.
Everything's perfectly all right now. We're fine. We're all fine here, now, thank you. How are you?
