i have to admit I've never heard of a sous vide omelette..i can make about 5 of them in a pan in 15 minutes

I figured it was an easy jump from "camping omelette made in boiling water" to "quick omelette while I'm doing something else".

One of four things: (1) the water wasn't heated up to 160 degrees before you put the egg in (your sous vide could be off); (2) you had an air pocket (either in the bag or in the yolk) -- air is a terrible conductor; (3) you had a bad egg or just got sick related to something else; or (4) your recipe was off by the temperature or amount of time you were supposed to leave it in there (my america's test kitchen sous vide cookbook recommends 167 degrees for 12 mins. for soft poached eggs).

my favorite one is over 100 years old..it was my great grandma's handed to my mom..when i left home for college at 18 i asked if i could have it..
i probably have 5 or 6 but that one always gets the most use

I don't even use the salt anymore. While it's still hot, I add a little water stir it around a bit then dump it and wipe it with a towel.tragabigzanda wrote:My buddy got me this little cast iron scraper/cleaner tool for Xmas that is really helpful. I've pretty much been using mine every day during Whole30. We made some chicken and steak fajitas on her a couple of nights ago that I'm still thinking about.
