Rococo isn't nonsensical or made up. It's an art / architecture style.

The song mocks "modern kids", hipster art students. It uses "Rococo" to represent a hipster art school interest, something these kids will say they love without knowing much about it.
The only problem with the song is that these kids were probably Arcade Fire themselves at an earlier age.
