They’re two totally different products. And quite honestly, I’m not, like, a super fan of sour cream. They are different. Just seems to me that reasons most people don't like mayo would apply to sour cream as well. But if you're not a big fan of sour cream, either, that makes sense. Do you like anything with a mayo base? Like a tuna noodle casserole? Or any kind of mayo bases slaw? I do not. The taste of the mayo always comes thru. It’s not the consistency that bothers me, it’s straight up the taste. so there's really only one thing I'll use mayo for -- grilling whole fish directly on the grill grate. it makes it virtually non-stick, and it burns off.

Dijon mustard- not really. I'm not a big fan of mustard in general, but if I do get it on a sandwich, it's spicy brown
Sunflower oil- no problems
Vinegar- love it
Lemon juice- love it
