I cook all the vegetables that are going in it in a frying pan, and when they're just about done I pile them all to one side of the pan and use the other side to scramble an egg or two.

Once the eggs come together I mix it all together in the pan with the vegetables. Then I take the mixture out of the pan and put it aside in a bowl, covered with foil to stay warm.

Then I melt some butter in that same frying pan, and fry the rice on top of that. When the rice starts to crisp up a little I mix in a dash of soy sauce and a dash of ponzu sauce and mix it all together. funny story...we've been married for 20 years and my wife makes outstanding mashed potatoes so i haven't made them since..lots of butter
