But back to tortas.

It really really is all about the bread. The best bread is somehow fluffy and soft all around yet impervious to all the fat and sauce that makes a torta say ugh.

I like the Mexico-city style ones with the chorizo on them, but I much prefer tacos to tortas.

I always found it confusing that Mexicans call these sandwiches "tortas". Because 'torta" means "cake" in Spanish. Why that? Weird

There's a lot of this in english too. British and US "biscuits" quickly come to mind.
