It's case by case. My bar does it, but we've always employed people to check IDs at the door anyway. Now we've added temp checks and the mask speech to their greeting routine. Our company spends some of our dwindling sales on disposable masks every month for people who "forgot" theirs, and there has been minimal pushback. Having already trained door staff helps achieve this goal without it feeling hostile. The people who really, really don't want to wear a mask will just go somewhere else, I've found. We are lucky to not have had any major incidents at the door in this regard, but recently a bar on another side of town had a terrible event that perhaps goes a way towards helping your point that a mask gestapo leads to trouble.

It has been my experience that how it is presented and enforced goes a long way to influence how an anti-masker responds. Then again, some people are just aggressive dicks.
