Anyone looking for an easy, healthy variation on chickens curry -- I got you.

Coconut Oil
Boneless skinless chicken thighs
Red pepper, diced
Carrots, chopped
Potato, cubed
Onion, diced
Garlic, minced
Ginger, minced
Yellow curry powder
Turmeric
Ground Cumin
Garam Masala
Salt
Crushed Tomatoes
Full fat coconut milk

Sear the chicken in a wok. After it's cooked, remove and add the peppers and spices. Transfer to a dutch oven or pot, then add the remaining ingredients (leaving the chicken out), bringing it all to a boil. Let it simmer for about ten minutes, then add the chicken. Serve with cauliflower rice for the Whole30 experience, or basmati rice will always do just fine too if you aren't skipping grains.

Garam masala is a wise investment anyway. With this recipe, it really shines.
