It's just weird that when something calls for salt you specifically say kosher salt. It would be like me saying how I season something "with pepper and iodized salt"

Not really. There are different ratios and consistencies involved. If something calls for just salt, the assumption is that it’s simple table (or iodized) salt. The only time I ever use table salt is for wet brining. Otherwise I use kosher salt. It dissolves more uniformly and does a better job of keeping moisture in meat with a dry brine.

Here, because the salt crystals are larger, they’re more oil soluble and therefore do a better job of absorbing the lemon and orange flavors.
