Not really. There are different ratios and consistencies involved. If something calls for just salt, the assumption is that it’s simple table (or iodized) salt. The only time I ever use table salt is for wet brining. Otherwise I use kosher salt. It dissolves more uniformly and does a better job of keeping moisture in meat with a dry brine.E.H. Here, because the salt crystals are larger, they’re more oil soluble and therefore do a better job of absorbing the lemon and orange flavors.

lent starts on wednesday, which means that if i so much as think about eating meat on a friday, eternal damnation awaits my fate. and so i've been stocking up on jars of this. they're pricey (about $8 a jar), but man are they worth it.
