I guess getting hit with a plasma beam could cause a body to vaporize. I have heard that lightsaber strikes wouldn't be clean cuts, they'd make your blood instantly boil and explode around the point of impact.

A simpler explanation is that known con-man Obi Wan Kenobi could have set up a series of mirrors to make himself scarce to avoid prosecution for the murder of the Lars family.
