15-20% fat, grassfed beef only, or bison which is always grassfed.

Only add salt & pepper.

Form into a ball, press your thumb in the middle.

NEVER press them down on the grill/griddle. That's an amateur move.

This is me, too, but I could take or leave the grassfed part. Don’t care about that.

we've made these a couple times, they're awesome. our stovetop has a griddle fitting that we use, but you can use a pan too.

soma just buy a $30 cast iron that you can preheat in the oven and get piping hot and then put it on the stovetop. so good.
