Hummus is what suburban white people tell themselves is healthy and delicious when trying to eat better. It is also what they use to say they like "middle eastern" food.

This is true. There are exceptions like Chris H getting some authentic stuff, but it's a bit of a never ending fad in the burbs.

Personally, I don't care for it. I'll eat it no problem if that's what there is, I'm not picky, but I will always choose the meat option if available.

Do you primarily consider hummus a vegetarian option to full meat dinners, and not as a side dish or a dip?

No no, I realize it’s a side. To be honest I only ever eat it as a “dip” with chips or whatever. But there’s usually other options (pepperoni & cheese, for example) which is obviously not healthy, but I can’t resist. Hummus is tolerable but blah to me.
