the eggplant prep: slicing, salting, blotting, then breading and frying before you even get to making the sandwich. Not awful by any stretch, but it does take a bit of work.

i've done this. once. i won't be doing it again.

I generally make a huge dish of eggplant parm in the oven then use that as sandwiches for a couple of days

This reminds me of a cruise that I was on ... large cruise ship in the Caribbean ... there was always a huge buffet with every kind of food you can think of.

I always saw this one family, decked out in their Kansas Jayhawks gear, eating really nothing more than bologna & kraft singles on wonderbread sandwiches.

They would def use store bought, pre made guac.

i really love papaya. and i'm willing to overpay for the pre-cut stuff at whole foods rather than buy an entire papaya myself because i feel like the ones i buy are never as good.
