I’d switch the order but the sentiment is the same.

And cottage looks like potato chips.

That's why I've got them above the wedges. Cottage Fries are close enough to potato chips so that you can over-cook them, crisp them up, and get a pretty decent product that's not too different from a chip (which I love).

Wedges though? Ain't a fucking thing you can do with a wedge. Even if you try to crisp them, thy just get mushy. Useless fries, they should be called. Just eat a potato, yaknow?!

i didn't like cottage fries until recently. "french fries" is the cuisine this town specializes in, and there are a couple of places that really nail / escalate the cottage fry from what i had previously known.

edit: in the original pic doug posted, the curly could be considered a string. I'm talking shoestring size, straight, a slight outside crisp, a little rosemary, and parmesan on top.
