Scallops are fatty and warm and plumb. I've neve in my entire life had a scallop that was gritty or chalky.

I am glad you've never had a chalky scallop. It tends to happen when they are overcooked.

Yeah scallops can be easily over cooked. When perfectly cooked with a sear, they’re melt in your mouth delicious.
