Pretty much anything that goes with rice will also go with noodles nicely. What are you calling stir fry sauce? Anything that is soy sauce-based will be great with noodles. Black bean sauce. Sate (peanut) sauce. Plum / Hoi Sin sauce. Sweet chilli. Really anything Chinese / generally oriental will be eaten with rice or noodles. In the UK we probably have different names for some things but hopefully these are ringing a bell. I looked at a lot of different recipes and just threw random stuff in. The ginger was in one that called for soy sauce, but I didn't go that route.
