I've always gravitated towards cooking thicker cuts slowly and with the lid closed, but recently I've been buying a lot of skirt steak and veggies and doing more open-flame cooking. I'm a charcoal/wood devotee primarily for the calming moments and smells associated with slow smoking, but I feel like there's a huge element of flame cooking I'm missing out on by not doing more sizzling and popping with the lid open wide.

Might declare this the summer of sear.

i definitely don't consider myself an outdoor grilling person. i guess that stains my username a bit now that i think of it.

anyway, before i decided to go full speed ahead on plant-based eating, we used to go to a bar in OKC that serves up a great cheeseburger. it's similar in taste to that of a mcdonald's cheeseburger. i haven't eaten at mcd's since 2004, but i remember the taste. this burger at the bar (Bar Arbolada) got a stamp of approval from Alton Brown when he came to town a few months ago.

one of my kids is a super picky eater. it's a spectrum thing, and he has limited himself to a few foods, and lately a mcdonald's cheeseburger with ketchup only has been his go-to. we'll buy about five or so of them and let him eat on them for a few days.

this morning, i got it in my head that i would buy stainless steel griddle to slap atop our propane grill, and try my hand at recreating the mcd's cheeseburger, but as a smashburger. granted i've never made a smashburger, but it doesn't look difficult. additionally, the steel griddle would be great for breakfasts, and the food smells won't fill the kitchen and living room for hours.

i guess what i'm saying is this might be the summer of smash.

Flat top grilling is not something I have much experience with, but you can't beat a flat top burger.

i've come here to ask for opinions and halp. i had my heart set on a flat-top stainless steel griddle. i busted my hump cleaning the grill yesterday, and started looking online for one that fits ours. i've found a few, some that actually come with spatulas and smashers or whatever the hell they're called. i borrowed some steel wool from my neighbor yesterday, and when i returned it today, i told him what i used it for, and my plans for smashing it up this summer. he immediately talked up his cast iron flat-top and talked about how easy it was to season (use your oven), and i was like, well, shit. i was going with something a little more non-stick, but now i really don't know which one to choose.

for those of you that have a flat-top, which is better--stainless steel or cast iron? my plan is to do burgers and sometimes breakfast.

I’m no pro and have never owned a flat top. But I can’t imagine how annoying that would be to maintain. Would it be really heavy? If it were me I’d just get a stainless and then a cast iron skillet you can sit on top if you want.

Waffle House doesn’t need cast iron

I have cast iron. It isn’t too hard to maintain. I like it for a variety of things
