At dinner the other night a woman with our group didn’t know anything about steaks and the server started explaining (more fat, less fat, blah blah blah). After he left someone described NY Strip as the worst of both worlds. Me and another guy instantly shut him down because he is wrong. Eating around a lot of fat is like performing surgery on the damn thing, not just eating it.

I toyed with ordering ribeye since we’re at a nice place, but I ended up ordering my staple NY. Medium.

They brought me a ribeye. It was actually great, all the really fatty parts were around the outside and not running through the middle so I trimmed that and enjoyed the actual steak. Guy next to me had ordered ribeye “on the rare side of medium rare.” He sent it back after a couple bites, not rare enough.

Pretty sure they brought me his, and he got my medium NY which was actually a ribeye.

there's nothing better than a well-salted, prime, cowboy cut ribeye done on the bluer side of medium rare.

a steak restaurant is a place for businessmen types--salarymen--to work out their micro aggressions. grown men duking it out, dropping trou atop velvety armchairs, talking shop, wage-pissing. no winners here, just reckless abandon under a constant heat lamp of excess and no real import. god, what i wouldn't give for one on every street corner. we'd sort this country out toot suite, bucko.

I don’t really “get” steakhouses. $80 for a steak plus like $20 per side, at least $20 for a cocktail. Meh.

And they don’t even bring you what you ordered.
