The chops were decent. Overcooked, and the sauce was too sweet.
I’d rather just cook a couple chops normally and make a sauce separately.

so the ribs turned out great. i just wasn't a huge fan of the red-wine sauce (i'm more of a savory guy, and my tastebuds are tricked into thinking that a sauce like that will be more similar to a gravy).
