If I could only use one knife, it would be a serrated utility knife. Looks like this, can do just about anything serviceably, but is not intimidating or dangerous:

Wusthof is a good brand, I've used a Wusthof Classic chef's knife. But I couldn't get around with just a serrated knife. They are great for bread and crusty things but not great for precision slicing, chopping, mincing, peeling, paring, or carving meat.

The tip of the knife is not serrated so you can do stuff like garlic and bell peppers if you need to. In a one-knife world, that's the knife I want
