I once watched a video that showed you were statistically more likely to survive a plane crash if you were within 6 rows of the emergency exits. I always choose the over wing exit seats and so figure I'll give myself the best chance of survival in the event of the plane plummeting to the earth in a fiery heap of twisted, screaming metal.

If given the opportunity, would you pay for two seats (your seat and the empty seat in front of you) if they were able to remove the empty in front of you for the duration of your flight?

It depends on the airline. I'm also tall and a reclined seat makes me feel crowded, but it rarely actually touches my knees/legs. I just go into any flight knowing I will be uncomfortable for a few hours regardless.
