On youtube, there's a soundboard version of Ed joining U2 on Mothers Of The Disappeared from 5-14-17 in Seattle, WA but there's a 1-2-3-4 count track going the whole song. Does anyone know if an official version of this came out from U2? I thought they did official boots at one point, but could have that wrong.
Alternatively, if there's not an official version, has anyone with better skills than me been able to remove the count track?

Based on your description, this is probably an IEM capture.
There are a couple different IEM/aud matrix recordings available via the U2 Start site. I didn't listen to them but I would imagine they did their best to minimize any count track.
FWIW U2 never did official boots. A few official live releases over the years, and a ton of fan recordings, some quite good, some not at all.
