Hosted another hot sauce tasting last night. This was the lineup:

There were 10 guests rating each sauce 1-5 on flavor, spice level, and overall experience. So there was a maximum score of 50 for each category.

Some insights:

Balance Between Flavor and Spiciness:

Tattoo Kashmiri Coconut scored the highest in flavor (37) and overall experience (34) but had a moderate spiciness score (25). This points to the fact that a well-balanced sauce in terms of flavor and spiciness tends to provide a better overall experience.

Extreme Spiciness vs. Overall Experience:

Surprise surprise, Dave's Insanity Hot Sauce had the highest spiciness score (49) but a very low flavor score (13) and a low overall experience score (21). This indicates that extreme spiciness may detract from the overall enjoyment of the sauce if it is not well-balanced with flavor.

Blandness vs. Extreme Spice:

Even though Dave’s had a very low experience score, it wasn’t the lowest. That goes to Ay Maria, which scored a dismal 19. Complaints about Ay Maria were about its lack of flavor or spice. This says folks prefer when something is memorably bad than when something leaves no impression. I’m into it.

Consistency Across Scores:

Mande Picantes Chile de Arbol, Fly By Jing - Sichuan Gold, Shaquanda's Banjee Ranch Hot Sauce, and Baj's Blazing - Dad's Original all had consistent scores across flavor, spiciness, and overall experience, contributing to their tied ranking in overall experience (32).

Impact of Low Spiciness on Experience:

Shaquanda's Banjee Ranch Hot Sauce had the lowest spiciness score (10) but still managed to achieve a high overall experience score (32), likely due to its high flavor score (37). So a lower spiciness can be compensated by strong flavor to provide a good overall experience.

Flavor as a Key Determinant:

Sauces with higher flavor scores generally performed better in terms of overall experience. For example, Tattoo - Kashmiri Coconut and Shaquanda's Banjee Ranch Hot Sauce both had high flavor scores (37) and correspondingly high overall experience scores (34 and 32, respectively).

I’ve had that Dave’s Insanity for years. Totally agree with your assessment. Extremely fucking hot and not much flavor.

Yesterday, I bought Dawson's Cedar Smoked Garlic hot sauce. Very thick, and good. I mixed it up with mayo on a chik'n sandwich last night, good stuff.

Is your hot sauce party idea copyrighted Jorge or canned I still it someday if I ever have a large group of friends? It always looks very fun and funny

In any case, this is a super fun activity and I highly recommend it. Follow it with a simple dinner (like a pizza, so everyone can use their favorite sauces from the tasting. We had empanadas) and a cold dessert

I like this one a good bit, nice and thick. Not too hot. I think I don't really like sauces that are too vinegar-forward

realized I have like half a dozen different hot sauces so I decided to make a couple wings with each tomorrow. I have:

Frank’s (the baseline)
Yellow bird habanero
Secret Aardvark habanero (my fav sauce)
Esh Foods Habanero (got this stuff at the Amish market last year, never tried it)
Melinda’s ghost pepper (never had this one before)

Will post the results tomorrow.

Went to an expo of local hot sauce makers, had a wonderful time, and brought home a lot of tasty local hot sauces

Oh and I added a couple sauces since I had to get more secret aardvark anyway.

Overall the Queen Majesty was by far my favorite, but I feel like I wouldn’t necessarily go to it whenever I want wings since it has a pretty unique taste. (I wonder if they put garam masala in there.) Might use it as a marinade for some chicken breasts later this week.

Dirty Dick’s was great as always but a little too sweet for me to eat more than a couple wings. Not a fan of the Melinda’s (way too vinegary and pretty tame) or the local Esh Foods one, which tasted like tobasco with some liquid smoke added. I got food poisoning last year from some sausage I got at that Amish market so I guess it’s no surprise their sauce sucks.

Which Queen Majesty was it? She has a couple different flavors, the best being Scotch Bonnet and Ginger which is a top 5 sauce for me
