A good friend who is an executive chef once told me that line cooks absolutely hate being scheduled on the 15s. 3:45 in time? Fucking insulting to a line cook. They'd rather lose that 15 minutes on their weekly schedule and see it written as 4:00pm.

I'm pretty laissez faire about tardiness in general as long as it's not a blatant inconvenience and the quality of work is good when they're on. People have lives outside of work, yanno.

So a cool thing I do for my line cooks is leave the kitchen iPad permanently logged into my personal Spotify.

I don't really get into the whole "Spotify wrapped" thing, but I'll be sure to congratulate them for taking Bad Bunny to the top of my lists.

I've always wondered if that band name was a Hunky Dory reference.

On a similar note, I once worked for a hospitality group who named one of their restaurants "Hunky Dory" because that was the only CD in their test kitchen that didn't skip.

One of the most useful phrases I've learned from the line cooks is "poner las pilas." It's handy when you need someone to move with more urgency.
