A good line cook can whip up just about anything.
A good waiter can… iron a shirt?

and a good line cook usually has a gangsta hair net and cool tattoos and a buried history where he used to smoke dudes with a pistola but he would never take back up arms again

Re: Line Cooks
A good friend who is an executive chef once told me that line cooks absolutely hate being scheduled on the 15s. 3:45 in time? Fucking insulting to a line cook. They'd rather lose that 15 minutes on their weekly schedule and see it written as 4:00pm.

Re: Line Cooks
But of course they have no problem coming in at 4:15 for a 4:00 shift. Go figure.

would you ever confront them about the 15 mins of tardiness or are you concerned about being presented with an artful warning with a butterfly knife

Re: Line Cooks
I'm pretty laissez faire about tardiness in general as long as it's not a blatant inconvenience and the quality of work is good when they're on. People have lives outside of work, yanno.96583UP wrote:would you ever confront them about the 15 mins of tardiness or are you concerned about being presented with an artful warning with a butterfly knife

Yeah, he was probably out to eat with his family and the meal was late because the cook wasn't there.washing machine wrote: People have lives outside of work, yanno.

Re: Line Cooks
So a cool thing I do for my line cooks is leave the kitchen iPad permanently logged into my personal Spotify.
I don't really get into the whole "Spotify wrapped" thing, but I'll be sure to congratulate them for taking Bad Bunny to the top of my lists.

Re: Line Cooks
Imagine having to work with a line kook who's obsessed with The Kooks. That band was so aggressively average.

Re: Line Cooks
I've always wondered if that band name was a Hunky Dory reference.
On a similar note, I once worked for a hospitality group who named one of their restaurants "Hunky Dory" because that was the only CD in their test kitchen that didn't skip.

Re: Line Cooks
One of the most useful phrases I've learned from the line cooks is "poner las pilas." It's handy when you need someone to move with more urgency.
