Sounds like a good approach. Seems firm enough to stand up to grilling well. indeed, other than blackened catfish to cover up a muddy taste, my preference for fish is a simple broil with lemon / butter

I also eat the hell out of anchovies, herring, sardines, and mackerel, but enjoy them as a snack out of the tin, not in the way I eat the other fishes.
