I've said it before and I'll say it again. Taco night is always a good night.

i'm still adjusting to our stove. i made the mistake of using the most powerful burner, and i think it just overcooked everything, even at a simmer.

How long did you cook them for and did the peppers end up "soggy"? I read a few recipes, but they are all different re: amount of time/heat to cook them.red calzolaio wrote:yes.Chloe wrote:Just threw stuffed peppers in the crockpot. Anyone made them this way?

I'm pescatarian (veg+fish), and don't follow recipes.
Usually quinoa or rice, some sort of protein - lentils, microprotein (mushrooms) or TVP (textured vegetable protein), cottage cheese/ricotta and an egg to bind it all.
Tonight it is brown rice, cottage cheese, microprotein, salsa, an egg and taco seasoning. Right before they are done I'll add more salsa and cheese to the tops.

i'm going to put some fish in the food processor tomorrow. add some rice, breadcrumbs, garlic, jalapeno...and stuff those peppers.

i'm still adjusting to our stove. i made the mistake of using the most powerful burner, and i think it just overcooked everything, even at a simmer.
