I'm actually not a big fan of this kind of "spot color" treatment, but my brother-in-law specifically asked for one of his sailboat on water.

I'm not usually a fan of it either but I like how it works in that shot.

95 percent of these are from my S4. I think there are a few old photos (~10 years old from San Fran) in here from an old Canon subcompact.

My phone doesn't do it like that...

If you have an Android phone, try shooting in "Sports" mode. While the colors won't be as rich, the subjects will at least be in focus.
I also use the "HDR" function when I can, then desaturate the colors or turn it B&W.
Also, I do A LOT of post-processing.
