I recently got a pair of Audio Technica ATM-M50's and putting them to some good use.
A few of my favorites in no particular order:
The Flaming Lips - Embryonic
The Beatles - The White Album
Pink Floyd - Dark Side of the Moon (has to be in every discussion I've ever had on the topic)
Radiohead - Kid A
The Appleseed Cast - Low Level Owl
Sigur Ros - ( )
Pearl Jam - Binaural
Explosions in the Sky - The Earth is Not a Cold Sad Place
LCD Soundsystem - This is Happening

Agreed on Binaural, the White Album, Dark Side, and Kid A. All great on headphones.
I will add Led Zeppelin, and Led Zeppelin II to the list, the Into the Wild Soundtrack (more about listening to the album out and about in the world than I guess headphones per se - it just has a way of framing surroundings in my head), and I oddly still think the self-titled Pearl Jam album sounds great on a bus leaving New York City timed exactly so Gone is playing just as you lose the view of the city skyline heading north. Very specific memory that I am only allowed to hear on headphones.

Am I the only one that gets annoyed when sounds aren't mixed in relation to how the instrument is played? Snare should be on the left, ride cymbal on the right, piano should be bass on the left with the higher treble on the right ect. Makes things sound more "natural" IMO.

Yankee Hotel Foxtrot by Wilco has always been a good headphones album for me. Lot of cool noises and sounds spread out over top of those simple tunes.

My Grado SR 225s are finally dying after about 10 years. Can't wait to upgrade to a newer pair. Hopefully the Mrs lets me get some PS-500s

Fiona Apple's "The Idler Wheel" is a good recent example of a really good headphones album.

I don't really listen to them that much anymore, but most Tool albums have a few surprises that are best with headphones.
