Easy, Healthy Meals

Okay, I need some suggestions. I'm trying to take better care of myself, but a big obstacle is how lazy I am. I don't want to deal with a lot of cooking and whatnot; I can do that every once in a while but I'll burn myself out if I do it too often. So what do you more health-conscious RMers do for your regular, day-to-day dinners/lunches? I'm talking stuff that is as simple to throw together as a sandwich or a frozen pizza.

I'm really at a loss here.

It might be a good idea to invest a small amount of time in cooking, even maybe just once a week. I eat a lot of stuffed peppers, veggie-heavy stir-fries, stuff like that. It requires a fair amount of preparation and cooking on day one--but if you cook a big portion it's easy to grab some and heat them up throughout the week.
I also base my life around the idea that salsa and guacamole are really really good for you (cooked tomatoes and avocadoes, right?). And that a little parmesan cheese in your spinach is OK, too.
Frozen veggies are easy and supposedly just as nutritious as fresh.
Hard-boiled eggs are healthy right?
Buy minimal-ingredient whole grain bread. Also, eat two brazil nuts a day. It's for your colon.
Oatmeal.
Shun the microwave.

grill chicken and dont put anything fat on it
head of lettuce/sliced almonds/croutons/dressing
protein shake w/ bananas/strawberries/whatever your favorite fruit is

i'm about to eat crackers and cheese. dont do that.

I was doing this for a while, but it got boring real fast. Now I've slipped back into the bad habit of buying lunch every day

I'm thinking of trying a rice and beans sort of thing next.

lettuce wraps are quick and easy and relatively healthy. you can even make them with ground turkey instead of pork for added healthiness.

What exactly is a lettuce wrap? Just like a regular wrap except you use lettuce instead of a tortilla?
