I'd say that's a pretty accurate appraisal of Shawshank. I haven't seen it in years, but I've always considered it rather bland and vanilla (which is probably why I haven't revisited it). Just like you said - it's fine, I don't dislike it. But there's just nothing particularly special or interesting about it. It's just there.

Still need to see Quiz Show.

I have not. I've actually gotten into a bunch of other folk artists from the period, though. Dave Van Ronk, Phil Ochs, Tim Hardin, etc. Maybe they'll help me "get" Dylan.
