Doug try this on your pulled pork; mayo, mustard, slaw and pickles. Some hot sauce too. It might not be pulled pork in its purest form or dry but it is delicious.

Also I love eating the bark off the top. The perfect reward for patience.

I love it. The heavy vinegar flavor is a nice change from tomato based sauces. I also like to use mustard based sauces (mostly w/ pork bbq). I always go light on the sauce. I dont like drowning the meat in it.

I think I'm gonna grill up some pork chops this weekend with the mustard sauce.

It's pretty simple to make, the basic ingredients are:

Yellow Mustard
Brown Sugar
Red Wine Vinegar
Salt
Black Pepper
Cayenne Pepper

From there you can add more things...some folks put soy sauce in place of salt, some add worcester sause, some add a hot pepper sauce, some add fresh onions/peppers/garlic, etc...

For those that haven't tried it, and love to grill, I think you'll like it. I recommend it with pork chops, pulled pork or grilled chicken.

Sounds like a good sauce! I actually used something similar for the ribs I posted. I also marinated those ribs in a vinegar/oil mix overnight instead of using a dry rub. They came out incredibly tender w/o falling apart. The meat shrinkage :haha: also seemed to be minimized.

Darth, take a pic or two of your chops. They surely count as BBQ! This thread needs more grill/food pics!

wait.... people use something besides vinegar based sauce on BBQ pork?

Just kidding of course. I grew up in the lowcountry so that is what i prefer, but i've tried them all. It seems the vinegar is more known for be a north carolina thing, but everyone in the low coutnry of SC that i know use vinegar as well.

I went to a joint a couple weeks back adn they said they had a carolina sauce and they brought it out to me and it was mustard base.... I was not happy.
