How much story do the books really have left? I mean, I know Cersei is going to go down and Jon gets stabbed or something at the end of book 5, but it seems like there isn't a lot left. Idk.

One other thing I want to know, and a simple yes or no will suffice, but have Tyrion and Daeneryus met in the books?

No. Danny & Tyrion haven't met in the books.

There's so much stuff left in the books. Just a ton. But they're probably cutting the vast majority of it. They could very well have what they want covered from books 4 & 5 by season's end.

I don't think so. Despite the veering it still seems like they're setting him up to get stabbed.

I'm thinking that once Stannis makes it to Winterfell Jon will receive a letter saying Sansa is in trouble there and Jon will leave the wall to rescue her. And at that point his brother's will assassinate him because he's abandoning the watch for the wars of the seven kingdoms.

But no single character has died in their own POV chapter in the entire series. If Jon's dead he would be the first.
