HOW do you EAT your MEAT?
I'm embarrassed to admit that I used to be a "medium well / well done" kinda guy, but in the decade I've spent in Buenos Aires I've developed a taste for red. I just cooked a beautiful sirloin steak and came to the realization that medium rare is now my favorite state of doneness-- I've met some people who only eat it blue rare, which is way too much for me.

Here's my dinner. Ribeye cooked medium rare. Sauté broccoli and onion, and mashed potato. Delicious.

i used to be a rare guy, but tend to go more medium rare these days. anything more is a waste of a good steak.
i'd give blue rare a shot if it was a really nice cut and i was in the mood.

also, fuck that dry aged shit. i went to david burke's, a highly regarded steakhouse in chicago who pride themselves on the dry aged process (and make you pay for it), and the steak wasn't that great considering.

I had a great dry aged ribeye, it is for refined palates.
