Are these basically stratas, or something different?

More like a quiche or frittata- eggs beaten with a little milk for fluffiness, add ins put in a cupcake pan, pour the egg mix over it and bake for 15-20

For the Denver, I put thin sliced ham slices in like a cupcake liner, a couple slices of mushroom, a little diced bell pepper, crumbled bacon and cheddar

For the southwest I did a dab of cream cheese a dab of salsa and some diced green chile

Brilliant, my wife will love this for her early mornings at work. Thanks!

Just use a little nonstick spray in the pan and after cooling use a butter knife and go around the edge for easy removal. 9 eggs seems to do well on a dozen size pan
