When it comes down to it, armor didn't help the Lannister guards when all Syrio held was a wooden training sword.

Boiled leather and mail, which should be enough to blunt the thrust of a slender bravo's sword. Now, that still leaves a lot of openings for Syrio (eyes, neck, armpits, etc.), but it gives Jon the ability to make a mistake and not necessarily die. Syrio doesn't have that luxury. Longclaw is also a bastard sword, which makes it much less cumbersome to wield than a traditional long sword. I think this would be a back and forth battle, with Jon getting poked full of holes in the process, but one that he ultimately wins. Unless Syrio actually is Jaqen H'ghar, in which case the faceless man gets it done. Yeah, but those were also run-of-the-mill guardsmen, full of the hubris that comes along with facing an "unarmed" foe. I'd call it a speculation more than a theory. There's very little evidence to back it up.
