i put chopped onion and worcestershire in my burger meat from time to time and it's solid. the onion flavor releases in the beef to give it a nice flavor.theplatypus wrote:Nice. I will try the thumbprint thing next time.
This thread idea came from watching a Gordon Ramsay video where he put a bunch of stuff (onions, Worcestershire sauce, dijon mustard, a bunch of other things) into the meat and wondering if I was missing out.
earlier this week, a coworker suggested using crushed up potato chips to bind instead of bread crumbs.

I like to mix in chopped onion and chopped jalapeno into the meat, then form the patties. Otherwise, just salt and pepper.
And agreed... spend more on your beef. The better quality, the less you have to hide crappy taste.

spenno posted some Australian commercial montage from like 1995, and there was an ad for a McDonald's pushing their Kahuna burger. I may have to try an improvised homemade version...

Teriyaki seasoning / marinade
Ground Cayenne Pepper
Garlic Powder
Onion Powder
For the complete burger, McDonalds used bacon and a pineapple slice. I don't remember if there was anything else. Maybe I'd mix some of the teriyaki seasoning with Duke's mayo for the bun.
