While I can understand that one of the biggest joys of cooking stems from creative improvisation, I can't get behind this post at all. Recipes are sign posts along the way and they are a written history of food, technique and culture. The weak set out into the kitchen knowing nothing and have little more than a plate of flavored rice warmed up on a stove to show for it. The strong look to a long history of recipes before adapting them and ultimately destroying them.Bammer wrote:Recipes are for the weak.

I do love to make fried rice. Pretty much every time I cook a pot of rice for dinner, the leftover rice gets put in a ziploc bag to be fried up with bacon and topped with an egg the next morning for breakfast.

I use kimchi quite a bit when it comes to the aforementioned breakfast ritual. The crunch and the spicy sour oomph are a great wake-up call.E.H. This guy crisped his rice to the point of a socarrat. It looked so good. He has a restaurant in L.A., so I'll probably never get to try it.washing machine wrote:I use kimchi quite a bit when it comes to the aforementioned breakfast ritual. Re: What are you making tonight?
Husk? Yeah ate there recently. It has become waaay overrated since his appearances with Anthony Bourdain and others on food shows. The last visit was not very good and probably our last, as Charleston has so much to offer in the way of food, it isn't worth the money to eat there. There are so many "hole in the wall" places in Charleston that are so good it makes me want to be back in the food industry again.washing machine wrote:Do you ever get to eat at Sean Brock's restaurant?
