I was thinking with the play calling each team would PM me before each matchup what style they wanted. That way their opponent wouldn't know what they were going with (if a team failed to PM they would just be run with the balanced play calling option). In keeping with this, I would have someone else sim the games when the Packers played. Any thoughts?
Also, with weather variables, I was leaning towards letting the home team pick the weather settings (assuming they were realistic for the location and point in the season). Opinions?
Seems like a lot of work on your part to make the playing style overly secret. I would think that in "real life" the coaches would already know the style of offense opponents like to run, and then try to adjust accordingly. I personally have no problem with people seeing what offense I'm going to run, especially since it seems like WhatIf thinks that both Elway and Manning ran "balanced" offenses, even though they were two very different offenses in real life.
As for weather, how tough would it be to just pull up a list of average temperatures for the eight cities in question (or seven if Skitch chooses to play in a dome) in the fall, and just input that in? We could start the season mid-September and conclude around late December.
Also, while I think that I entered this upon creating my team, I very much want my home stadium to be Mile High Stadium and not [Corporate Sponsor] Field at Mile High--gotta ramp up the decibels, after all.
One way to do play call style is to let the home team put theres in after the away team, that way there's a bit of home field advantage, unless there's already one built in I'm not aware of.
I like the "average weather" idea.
And I feel ya GH, I almost went with the Cotton Bowl for old time's sake.
Everyone should look forward to playing my Chiefs team. I fully expect to win exactly zero games. In fact, if your all-time team loses to mine, you should be completely ashamed and probably quit the board forever.

I like the average weather idea. We'll go with that for temperature (first three games = September, second four = October, third four = November, final three = December). I'm still up for suggestions for how to do precipitation/wind (unless you guys just want to ignore it).
