What's the use-by date on that roast beef? I suspect either your casserole or the beef are getting tossed by Thursday.
i wouldn't buy the beef until tonight or tomorrow, so i'm imagining it's use by date should be at least 5-7 days...i may just freeze whatever's left of the casserole

I have never frozen a casserole and therefore defer to your best judgment.
it's basically just shredded chicken, corn, cheese, rice, and assorted seasonings
